Summer Camp Food Service/Catering Manager
Snow Mountain Ranch – Granby, COSalary Range: $55,000.00 - $60,000.00
POSITION SUMMARY:
This position supports the work of the YMCA of the Rockies, Snow Mountain Ranch, which operates a mission-based family and group conference and retreat center, and residential camp, serving more than 50,000 guests annually. The CCO Food Service Manger position is responsible and accountable for leading and assisting in the preparation of food at the YMCA of the Rockies, Snow Mountain Ranch Camper Hub. CCO Food Service Manager is also responsible for compliance with federal, state and county health regulations.

ESSENTIAL FUNCTIONS:
- Train, schedule, supervise and evaluate up to kitchen staff on camp food service operation in the summer months.
- Train, schedule, supervise and evaluate up to kitchen staff on catering food service operation throughout the year. Secondary to CCO during the summer months.
- Work holidays, weekends, and morning or evening shifts.
- Maintain a hygienic, neat, clean, professional appearance and presentation at all times.
- Understand cleanliness and sanitation protocol as directed by the YMCA of the Rockies and the Colorado Department of Health.
- Assists in cleaning of kitchen area and general maintenance of equipment.
- Have ownership of produced meals, meal presentation, facility cleanliness, and working relationship with employees.
- Assist Executive Chef with menu development for both CCO and Catering.
- Direct all aspects of food production for the residential camp food service serving over 400 campers and staff weekly, including ordering, preparation and inventory.
- Execute planned meals to the specification of Food Service Director and Executive Chef to fit the nutritional and dietary expectations at CCO.
- Acts as lead Chef in preparation, cooking, and distribution of special diet meals for CCO.
- Handle all ordering and inventory of products in the CCO hub and catering operation.
- Manage and operate within approved budget for camp food service expenses and labor costs.
- Assist Food Service Director and Executive Chef to build, develop, and maintain a catering team capable of executing all catering events at an elite level.
- Assist Executive Chef with catering menus and protocol.
- Direct catering efforts for Snow Mountain Ranch conferences, weddings, and family reunions.
- Work with wedding/conference coordinator to build and execute catering event plans. Including but not limited to conferences, weddings, and family reunions.
- Represent the YMCA as an ambassador with integrity and professionalism at all catering and CCO events.
REQUIREMENTS/QUALIFICATIONS:
- Culinary degree preferred, or equal kitchen experience
- Effectively coordinate with the Executive Chef to ensure high levels of customer satisfaction and seamless cooperation between CCO and back of house operations.
- Serv Safe Certification or program completion within 3 months of hire.
